Pot-au-feu léger au cabillaud

Last Sunday really lived up to his name, so we found ourselves 
at the Flagey market having morning coffee and fresh croissants. 
And the next best thing after breakfast in the market is to look something tasty for lunch :)

The day before we got our 5  creuset pots,
 so it was very clear that we have to try them and make a vegetable and cod fish stew. 
Here is the recipe for 4 persons (40min):

* 1 red onion 
* 1 leek
* 1,5 zucchini
* 300g potatoes
* 3 spoons olive oil
* 50ml dry wine
* 150ml fish stock
* 400g of cod
* A few sprigs of dill
* 100ml milk
* Half orange
* Salt&pepper

Preparation:
Cut the onion, leek, zucchini and potatoes into slices. Heat 3 tablespoons olive oil in a creuset pan and fry the onions and potatoes for 5 minutes. Add the leeks and stir well. Sprinkle with the wine and bring to boil.  Let simmer for 20 minutes until the potatoes are cooked. Add cod, zucchini and dill, and let simmer for 15 minutes. Add the milk, pepper and salt. Then serve in few plates and for the end add spring onion, orange zest and a little bit of orange juice. Enjoy! (The recipe in french you can find here)

My elixir


As it gets colder and colder, it's very important not to get sick, right?
As a person, who doesn't use any medication,
 I have my ways to stay warm and healthy.

A cup of tea, big wool knit scarf and a good book
  will definitely make your autumn evenings cozier.

Cutlets

As you could notice from my previous posts, I always made chicken dishes instead of red meat
(this could sound a little bit bizarre, knowing the fact that I'm vegetarian). 
But sometimes people (I mean my boyfriend and friends, who have to eat what I make) 
ask something beside chicken. This is how cutlets made their way to blog. 
Another great dish for autumn.
And healthy too, cause as a vegetarian I add a lot of vegetables EVERYWHERE possible.
Plus I changed wheat flour with flaxseed meal, so hello nice digestion :)
Mince carrots and onion
Half of it goes with meat, eggs, flaxseed meal, salt&peppers, italian spices.
Another half of carrots and onion goes for sauce. Bake it first with some butter, salt and pepper.
Then add tomatoes
Form cutlets
Bake them and when they almost ready, add the sauce and bake for 10 min more.
Make potato puree and serve it.

Crispy Hash Browns

My first recipe for autumn. 
For the weather like this ("this" I mean belgian weather - COLD AND RAINY)
you'll need something more serious then salads. 
Hash browns are perfect to warm up (I added some chili in the sauce ;) ) 
and to get enough energy if suddenly later on you would like to chase a bear
 or just have a walk in the park.

Potatoes, carrots, flour, onions, eggs, some salt and pepper - this is all you need for hash browns
With mushrooms, cream, spring onions, garlic and chili  make the sauce

Almost ready
Sauce baked on butter. I usually use two pans. One for hash browns, another for sauce. 
So everything is ready on time.
